I'm not, I just have really skinny wheels right now and the next type I get I want to be a lot wider. I thought 10" would be the next step up because I keep seein 11" wide and 12" wide so 10" seemed small.

If you offroad it, you will eventually be airing down. Here's a good writeup on the advantages in traction gained by running lower tire pressures. If you are going with a tire that's under 12.5" or 13.5" wide, I would stick to an 8" wide rim. That will give you the best stability both on and offroad.

You don't need a wider wheel if you want 10.5" or 11.5" wide tires. 12.5" and 13.5" wide tires have been run on 8" wide wheels.

Well how about 31"x10.5" tires on 8" wide wheels
