Maybe my thermostat?

My temp gauge will reach the 260 degree mark, but as soon as I turn on the heater it drops to 210. It doesn't take any longer than 30 seconds for the temp to drop. I'm thinking that my thermostat may need to be replaced, but does anyone else have any other sugestions?

260 deg. that's hot! hopefully you didn't hurt somthing else, like the head and / or the head gasket.
I know some thermostat are designed to remain open when they fail, and if they do get stuck closed you'd know right away, It would get hot very fast and might even burst a hose or gasket.

IS this something that appeared overnight type thing or has it been steadily creeping up to 260*?

After you turn the heater on and it gets the cooler fluids from the heater core and lines, does it creep back up to 260* again?

If its a stuck open tstat. Ussually in winter if the temps are cooler where your at, it will run cool while driving and heat up only at stops or at idle. Unless of course the radiator is plugged with dirt. Ussually you will only overheat if driving on hot days were the radiator cant recover fast enough.

Another could be is the radiator cap is failing and isnt allowing the system to presurise, or maybe its time for a new radiator. Are you still running the factory one? They are well documented with failures after 5 years or so. Same goes for the water pump impeller. The impeller corodes or gets filled with enough gunk so that it cant move the water efficiently.

Probably start out with a pressure test and go from there.

The radiator is only about 3 years old. Water pump was replaced about 4 3 years ago also, will the impeller be replaced with that? I didn't do the job and had a shop do it so I don't know.

When I turn the heater on it wont creep up to 260 again but sometimes it will hover in between 210 and 260 and then drop down to 210.

replaced the thermostat and that fixed the problem!

Also even though thermostats are designed to fail open, they can and will fail closed.

If you were tempted to just not put a thermostat back in , that can also cause problems. Without a thermostat your fluid cycles so fast that it can take forever to warm up causing more fuel to be used. Once it's hot it cycles too fast for radiator to work.
